Spinach Pie "Wrap" Quesadilla

The "secret" ingredient? Raisins! Yes, they're good for you and yes, they're usually found in granola, but if you're up for something a little different (and dare we say delicious) give this one a try -- the sweetness of dried grapes goes fabulously with the savoriness of melted provolone and hot spinach in a lightly toasted wrap.
Spinach Pie "Wrap" Quesadilla.
1 whole-wheat flour tortilla
lots of baby spinach (about 2 generous "grabs" with the tongs)
1 slice provolone cheese
1/4 cup shredded cheese
3 Tbsp raisins
1. Place provolone cheese on tortilla. Pile on the spinach, shredded cheese, and raisins.
2. Fold carefully into a "wrap" -- it will be rather puffy but the spinach will wilt down.
3. Place in a pre-heated panini press and let it do its thing for 5 min, or until golden brown grill marks appear.
4. Slice in half and enjoy.

Mashed Potato Scallion Pancakes

Inspired by pan-fried scallion pancakes from East Asian cuisine. Creamy potatoes and melted cheese contrast nicely with the crisp tortilla fresh out of a panini press.
Mashed Potato Scallion Pancakes
1 whole wheat tortilla
1/2 cup mashed potatoes (1 spoonful)
2 slices cheddar cheese
1/4 cup scallions, plus extra for garnish
3 onion rings
1. Spread mashed potatoes on one half of whole wheat tortilla. Layer cheese and onion rings on top, sprinkle with scallions.
2. Panini press for 3-5 minutes and garnish with fresh scallions.

Roasted Sweet Potato Quesadilla

Inspired by Al Forno's sweet potato appetizer pizza. While nowhere near as gourmet as the pizza version, this crisp, cheesy, onion-y sweet potato quesadilla is nonetheless delicious in all its Ratty-fied glory.
1 flour tortilla
1 baked sweet potato (1/2 cup mashed)
1/4 cup scallions
3-4 red onion rings
2 slices swiss cheese
1/4 cup shredded mozzarella cheese
2 Tbsp caramelized onions
1. Spread mashed baked sweet potato on one half of tortilla with a fork.
2. Layer swiss cheese, mozzarella, scallions, caramelized onions, and red onion rings on other half.
3. Fold in half and panini press for 6-8 minutes, or until golden brown grill marks appear.

Turkey Spinach Quesadilla

Crispy ridges on the tortilla from the panini press add unique texture to this quesadilla that oozes melty cheese around pockets of fresh spinach and savory turkey. Brushing the tortilla with melted butter or oil before putting it in the panini press gives it an extra crunch and nice "grill" marks.
Turkey Spinach Quesadilla
1 whole wheat tortilla
1/2 cup shredded white cheddar cheese
1/4 cup shredded turkey
1/2 cup raw baby spinach leaves
2 Tbsp melted butter or olive oil
sour cream, salsa, guacamole (optional)
1. Brush both sides of the tortilla with melted butter or oil. (Or just brush the outside)
2. Fill half of the tortilla with all the remaining ingredients, dispersing them evenly throughout. Fold over the other half to form a half moon.
3. Spray the panini press with nonstick spray and place folded tortilla with fillings on the press.
4. Press for 2-4 minutes, checking every minute until cheese is melted and tortilla is crispy or golden brown.
5. Serve with sour cream, salsa, or guacamole if desired.
