Easy Peasy Beans

When you are in a rush and want to eat something nutritious yet simple, go for an assortment of beans, peas, veggies, and tuna. This combination almost has all the colors of the rainbow! Now if only there were some purple eggplant and blue...uh blue...raspberries?

Easy Peasy Beans
shredded zucchini
sauteed green beans
steamed green peas
pinto beans
black beans
garbanzo beans
halved cherry tomatoes
1/4 cup serving of tuna
1 tsp ranch dressing (or your favorite dressing)
1 tsp sour cream
1 tsp mayonnaise

1. Arrange zucchini, beans, peas, tomatoes, and tuna on a plate.
2. Drizzle tomato with dressing.
3. Top the tuna with sour cream and mayo.

Open Faced Tuna Melt on 7 Stars


I love sandwiches. They often seem like a warm-weather kind of food (think picnic on the Main Green when its 70 degrees out), but they can be just as yummy in the snowy cold - especially when they feature warm, melted cheese.

Open Faced Tuna Melt on 7 Stars
1 slice whole grain 7 Stars bread
Mediterranean tuna salad
1 slice of Swiss cheese
1 tsp olive oil or 1 tsp mustard

Spread the bread slice with olive oil or mustard, top with tuna salad and cheese, folded in half. Microwave on high for 1 min, or until cheese has melted. Enjoy!

Broccoli Tuna Melt Salad



This hot/cold salad was inspired by Meeting St's gigantic Broccoli Tuna Melt sandwich. I never manage to eat those sandwiches properly anyway, so this "deconstructed" version of the sandwich lets you mix everything together and eat with a fork, like a salad.

Broccoli Tuna Melt Salad

2-3 lettuce leaves
3 slices tomato
1 scoop tuna salad
5-6 broccoli florets
6-7 mushroom slices
1/4 cup shredded cheese
3 onion rings
1 slice thick honey wheat bread

1. Arrange lettuce and tuna salad on a plate. Cut tomato slices in half and arrange around tuna salad.
2. Microwave broccoli and mushroom on a plate with 1 Tbsp basil infused olive oil and 1 Tbsp water (2 min, cover with another plate, on high).
3. Sprinkle cheese over cooked broccoli and microwave another 30 seconds or until melted.
4. Arrange broccoli/mushroom/cheese mixture over tuna salad.
5. Slice onion rings in half and cube the bread into 6-7 "croutons." Arrange over top and enjoy.

Tuna Edamame Salad



Tired of the same old salad dressings? Love asparagus? Love creamy stuff? Then try drizzling a ladle of creamy asparagus soup on your mixed greens!

Tuna Edamame Salad
1 plate of mixed greens
1/4 cup feta cheese
1/4 cup tuna
1/4 cup edamame
1 ladle of creamy asparagus soup

1. Assemble salad and drizzle soup on top.

Spicy Tuna Melt Baked Potato



I just love the savory combination of tuna and melted cheese. The baked potato magnifies and marries the creamy savoriness of the two, and it is quite yummy.

Spicy Tuna Melt Baked Potato
1 baked potato
1/4 cup tuna
2 Tbsp sour cream, plus a dollop on the side
1/4 cup shredded cheese, plus more for topping
1 Tbsp chopped red onion
1 tsp ground oregano
dash of Tabasco
sprinkling of red pepper flakes
sprinkling of dried chives
salt and black pepper
broccoli on the side

1. Cut a thin slice off the top of the potato (lengthwise).
2. Scoop out flesh of potato into a bowl. Mix with tuna, sour cream, cheese, red onion, oregano, Tabasco (use a fork to mash them together til smooth).
3. Sprinkle shredded cheese on top and melt in microwave for 50 seconds, or until melted.
4. Garnish with chives and red pepper flakes, season with salt and pepper. Serve with steamed broccoli and a dollop of sour cream.

Tuna Salad Salad


What else would you call a salad with tuna salad on top?

Tuna Salad Salad
2 cups mixed greens
4 grape tomatoes, halved
3 olives, sliced
1 slice Seven stars bread
basil infused olive oil

Tuna Salad
3 tsp mayonnaise
black pepper
1/8 tsp garlic powder
1/8 tsp onion powder
1/8 tsp ginger powder
1 Tbsp red bell peppers, diced
1 Tbsp green bell peppers, diced
1/4 cup tuna

1. Toss the mixed greens, tomatoes, and olives.
2. Lightly drizzle both sides of bread with basil infused olive oil. grill on the panini for 3 minutes, or until golden brown.
3. Meanwhile, mix together all ingredients of tuna salad.
4. Remove bread from panini press, tear into crouton-sized pieces.
5. Garnish salad with tuna salad and croutons, and some black pepper.

Creamy Tuna Dip


Chunky and savory appetizer with ingredients from the grill (lettuce, onions, relish), drink station (lemon), Tastes of the World line (scallions, sour cream), salad bar (tuna, green bell peppers), spices counter (garlic, ginger, paprika), soup station (cracked black pepper, crackers) and burger condiments counter (mayo).
Creamy Tuna Dip
Juice of 2 lemon wedges
1/4 cup sour cream
1/4 cup tuna
1/4 tsp paparika
1/4 tsp garlic powder
pinch of garlic salt
a few turns of black pepper
1/8 tsp ginger powder
2 Tbsp diced green bell peppers
3 Tbsp scallions
1 Tbsp white onions
3 tsp relish
1 Tbsp mayonnaise
1 hard boiled egg
2 lettuce leaves
1 lemon wedge for presentation
1. Mix all the ingredients up to the mayonnaise in a cup.
2. Peel the egg, dice it up, and fold it into the dip.
3. Spoon the dip onto the lettuce, garnish on the side with a lemon wedge and garnish the top with scallions and paparika.
4. Serve with crackers.

Tuna Alfalfa Sandwich



The alfalfa at the V-Dub adds a delicate crisp to the mayo-infused tuna. If you're lucky enough to find fresh multigrain bread, this sandwich becomes a pillow of deliciousness.

Tuna Alfalfa Sandwich
2 slices multigrain bread
3/4 cup alfalfa mixed with 1 tbsp mayo
3/4 cup tuna mixed with 1 tbsp mayo
1 slice swiss cheese
2 slices tomato
pepper

1. Spread one slice of bread with alfalfa mixture.
2. Layer on tuna mixture, tomatoes, and cheese.
3. Add the other slice of bread, cut in half. Bon appetit.
