Nadya's Omelette Burrito
Can't decide between getting an omelette or making a burrito?? Why choose! Here's a delicious recipe for an omelette burrito, courtesy of Nadya Kim '17. Just look at the luscious cheese melting into the fluffy egg and creamy guac...
Nadya's Omelette Burrito
1 omelette (I asked for everything on it)
1 wrap from the grill section
Whatever toppings are available at the burrito bar (I put salsa, guacamole, corn, and some black beans)
Go to the egg station at the Ratty and order an omelette with the desired condiments Once you pick up the omelette, put it on one half of the wrap Add whatever toppings are available at the burrito bar Wrap it burrito style (fold it halfway with all the stuffing tucked in, then fold the sides, and wrap it up)

Stephanie's Falaco (Falafel Taco)
Falafels – deep-fried, crispy balls of yumminess that still have all the health benefits of chickpeas. Can they possibly get any better? Why yes, indeed they can! Pair them with your choice of ingredients from the Ratty’s beloved vegetarian burrito bar, and lo and behold: a nutritious AND delicious combo of South meets Middle East. Velvety guac and rich sour cream serve as textural contrast to crunchy falafel balls while tangy salsa and chunky veggies brighten up the plate. Thank you to Stephanie Chung for sharing this creation!
Stephanie’s Falaco
1 flour tortilla
3 falafels
shredded lettuce
diced tomatoes
shredded cheese
salsa
guacamole
sour cream
black beans
corn, squash, and tomato mix
Assemble burrito bar toppings on a flour tortilla to form a scrumptious bed for your falafels. Fold and enjoy!

Vishesh's Mediterranean Veggie Wrap
As delicious as soul food, fried meat, and melted cheese can be, some ripe fruits and vegetables can be a refreshing delight. Inspired by East Side Pockets, this veggie wrap pulls on some bright flavors from the Mediterranean repertoire for a light meal to go. Crunchy lettuce and juicy tomato plus tangy capers and strong olives make my mouth water!
Vishesh's Mediterranean Veggie Wrap
plain or herb wrap
olive oil
balsamic vinegar
diced onion
diced or sliced tomato
crisp lettuce
chopped olives
capers
crumbled feta cheese
salt and pepper
Layer a small plate with diced onion, and mix with olive oil and balsamic vinegar to lightly coat them. Microwave for 1 minute, stirring occasionally. To the wrap, layer in order the onion, lettuce, and tomato, and then sprinkle with feta, olives, and capers. Finish with just a dash of salt and pepper, and wrap it up!

"Andreas-style" Spinach Mushroom Pita Sandwich

As I was savoring a particularly juicy, cheese-smothered mushroom in my Greek veggie sandwich the other day at Andreas, it suddenly occurred to me: I had, at the Ratty, pretty much all the ingredients conveniently at my disposal to recreate that very same sandwich.
Mushrooms, spinach, tomato, onion, swiss and American cheese are ordinary on their own but absolutely wonderful in a warm pita nuked in the microwave for a minute or so. Served with a romaine lettuce salad, you could seriously imagine that you are dining at a particular Greek restaurant on Thayer street.
"Andreas-style" Spinach Mushroom Pita Sandwich
1 pita
plateful of spinach
1 slice of American cheese
2 slices of swiss cheese
sliced mushrooms
2-3 slices of tomato
2-3 onion rings
golden raisins (optional but very yummy)
1 large piece of wax paper
1. Microwave spinach and mushrooms on a plate for 2 minutes, or until spinach is cooked.
2. Place tomatoes and onions in a pita. Layer spinach-mushroom mixture on top and sprinkle with golden raisins, if using.
3. Place cheese on top and roll the pita up on both sides. Wrap a wax paper "diaper" on one end.
4. Nuke in the microwave for about 1 minute to melt the cheese.
5. Serve warm with a salad of lettuce, tomato, cucumbers (olives and feta too if available).

Savory Spinach Tofu Wrap

Savory Spinach is delicious by itself, but downright scrumptious in a wrap. I mean, who can resist the green spinach-y cross section of a wrap filled with Savory Spinach? Your post-Thanksgiving protein/fat/sugar-laden digestive system will thank you.
Savory Spinach Tofu Wrap
1 herb (?) tortilla (the one with the greenish flecks in it)
vegan grilled Asian veggies
peanut butter
soy sauce
honey
tofu (6-8 cubes)
savory spinach
1. Mix 2 Tbsp peanut butter with a tsp of soy sauce. Spread on flour tortilla. Drizzle with honey.
2. Put veggies, tofu, and spinach on tortilla. Wrap it up, cut in half, admire the cross-section. Enjoy!

Almost Vegan Burrito

I almost called this "Vegan Burrito" but realized that it has sour cream! Oops. But you can still make it vegan - just omit the sour cream and replace it with something else that is creamy, like hummus!
Almost Vegan Burrito
1 whole wheat tortilla
1 serving of vegan roasted veggies (peppers, zucchini, tomatoes, onions)
lettuce
sour cream
refried beans
salsa
1. Pile everything onto a wrap.
2. Wrap it up.
3. Cut in half.

Vdub Hummus Wrap

The hummus at the Vdub is really good; 'specially in a wrap.
Vdub Hummus Wrap
1 whole wheat tortilla
1 spoonful of Vdub hummus (the kind with the green bits in it)
2 Tbsp tabouli
2 Tbsp feta
2 Tbsp diced onion
2 leaves lettuce
1. Spread hummus on wrap (I like to do a horizontal streak of it on the bottom third).
2. Add tabouli, onions, lettuce, and feta.
3. Roll up wrap carefully. Slice in half and enjoy.

Rainbow Pinwheel Sandwiches

Great as an appetizer or lunch, and embarrassingly easy to make. Feel free to mix and match wrap flavors, cheeses, meats, and veggies; you really can't go wrong with any combo.
Rainbow Pinwheel Sandwiches
1 tortilla sheet
sour cream (optional)
cheddar, swiss, or american cheese
sliced turkey or ham
mixed greens or lettuce
bacon (optional)
1. Spread sour cream on tortilla, if using.
2. Layer on: cheese, sliced meat, greens.
3. Roll up sandwiches -- not too tightly or too loosely. Stick 5 toothpicks in the roll, spaced evenly apart. Cut out the ends and cut the roll into five sandwiches.

Spinach Pie "Wrap" Quesadilla

The "secret" ingredient? Raisins! Yes, they're good for you and yes, they're usually found in granola, but if you're up for something a little different (and dare we say delicious) give this one a try -- the sweetness of dried grapes goes fabulously with the savoriness of melted provolone and hot spinach in a lightly toasted wrap.
Spinach Pie "Wrap" Quesadilla.
1 whole-wheat flour tortilla
lots of baby spinach (about 2 generous "grabs" with the tongs)
1 slice provolone cheese
1/4 cup shredded cheese
3 Tbsp raisins
1. Place provolone cheese on tortilla. Pile on the spinach, shredded cheese, and raisins.
2. Fold carefully into a "wrap" -- it will be rather puffy but the spinach will wilt down.
3. Place in a pre-heated panini press and let it do its thing for 5 min, or until golden brown grill marks appear.
4. Slice in half and enjoy.

Veggie Burrito

Microwaved veggies from the salad bar with sour cream and beans on a sundried tomato tortilla = yum. Cooking mushrooms really brings out their flavor, and honestly, anything with sour cream is bound to be good. Is there anything that's disgusting with sour cream? Nothing, I assure you. What's that you say? Powerade?
Veggie Burrito
raw broccoli
mixed salad leaves
mushrooms
basil infused olive oil
sundried tomato tortilla
sour cream
pinto beans
edamame
black beans

2. Spread tortilla with sour cream, beans, and cooked veggies.
3. Roll up.
4. Cut on a diagonal and eat.

Asian Chicken Lettuce Wrap

A succulent lettuce wrap with the flavors of soy sauce, sesame oil, ginger and fresh scallions. It's tricky to eat because the lettuce doesn't do a very good job of holding together all the carrots and scallions (maybe a tortilla would be better?), but if you do manage to get everything in one bite, the flavors of spicy, sweet, salty, and tangy play very well off of the refreshing lettuce and juicy tomato and tender chicken.
Asian Chicken Lettuce Wrap
1 Tbsp sesame ginger sauce (see below)
2 large, intact lettuce leaves
1 chicken leg, shredded, skin removed
3 tomato slices
2 Tbsp cup shredded carrots
3 red onion rings
3 tsp scallions
Sesame Ginger Sauce
1/8 tsp rice wine vinegar
1/8 tsp ground ginger
3 tsp sesame oil
1 tsp reduced sodium soy sauce
1. Layer all ingredients on the lettuce, and drizzle on the sauce.
2. Attempt to roll up everything in the lettuce and take a good, representative bite, give up, and grab the lettuce wrap barbarically and eat.

Turkey Wrap with Ginger Hoisin Sauce

With ginger hoisin sauce, a little bit goes a long way. To make this a vegetarian wrap, substitute the turkey for cubes of organic firm tofu, whose smoothness balances the sharpness of the sauce very nicely.
Turkey Wrap with Ginger Hoisin Sauce
1/2 spinach tortilla (cut a whole one in half and you can make two!)
2 slices tomato
2 leaves lettuce
2 slices turkey
7-9 sugar snap peas (optional) 1 purple onion ring (not the whole disk)
3 tbsp hoisin sauce
2 tsp powdered ginger
1 tsp sesame oil
scallions, baby tomato for garnish
1. Make sauce by mixing hoisin sauce, ginger, and sesame oil in a small cup. Spread this mixture over one side of tortilla.
2. Put lettuce, tomato, turkey, peas, and onion ring in tortilla and fold both sides over to create a triangular pocket.
3. Secure with a toothpick (if you happen to have one) and garnish with tomatoes and scallions, and any extra sauce. Devour.
