Jennifer's Wafflewich Panini
What do you get when you cross a waffle with a panini? A wafflewich panini! (or waffini...or paniffle...?)
Special thanks to Jennifer Pan for sending us this ingenious recipe. According to Jennifer, "you can do a lot more with waffle paninis" - we're thinking roast beef and swiss; grilled chicken and roasted red peppers; chicken fingers, lettuce, and honey mustard sauce...the wafflewich panini possibilities are endless.
Jennifer's Wafflewich Panini
1 waffle
1 slice ham
1 slice turkey
1-2 slices cheese
lettuce
Make a waffle, cut in half. The two halves are now your "bread." If you're really hungry you can just make 2 separate waffles.
Pile one of your waffle halves with everything you'd like in your panini. I usually go for ham, turkey, cheese and lettuce. Drizzle the other waffle half with maple syrup. (If you don't want syrup in your panini you can skip this step, it's still good.)
Put the 2 waffle halves together so that the syrup side is on the inside of the sandwich. Panini press it.

Paul's Buffalo Chicken Salad
Friday lunch isn't Friday lunch if it's not at the V-dub. We're pretty sure by now that the location of the V-dub is no longer a secret and neither are its gorgeous deep fried strips of tender poultry goodness. What might not be so obvious, however, are the creative applications in which one can enjoy this beloved Friday lunchtime staple.
Voila, Paul's Buffalo Chicken Salad! Special thanks to Paul Martino for sharing his go-to recipe for jazzing up what might be Brown Dining's most heavily sought after menu item. It is an exquisite interplay of tangy/creamy crunchy/savory goodness, all on a top of a leafy bed of romaine and veggies for added vitamins; a meal that will surely satisfy your taste buds, your muscles, your brain, and your soul.
Paul's Buffalo Chicken Salad
romaine lettuce
3 chicken fingers (sliced, diced, or whole, I usually just chop them up as I eat the salad)
shredded carrots
chopped egg (from the salad bar)
2 ladles of buffalo sauce
2 tablespoons of bleu cheese cressing
cucumber slices
Place the chicken fingers, egg, and carrots over a bed of the romaine lettuce. Add the cucumber slices, pour on the dressing and drizzle with buffalo sauce. Try it, it's great!

Sam's Chicken Finger Friday Chicken and Waffles
Happy Chicken Finger Friday, everyone! We received this recipe from Sam Heft-Luthy. Yes, it's V-dub not Ratty Gourmet, and you should give it a try! In Sam's own words, it's a "simple yet elegant twist on a Southern staple." We couldn't have said it better ourselves.
Sam's Chicken Finger Friday Chicken and Waffles
4-5 V-Dub chicken fingers
1 V-Dub waffle
1-2 Tbsp Tobasco sauce
liberal drizzle of pancake syrup
This is pretty self-explanatory, but put the chicken strips on the waffle, then drizzle the tobasco and syrup over them. Add a cup of coffee and a copy of the New York Times for a Sunday brunch experience on a Friday afternoon.

Nathan's Vanilla Soft Serve

In honor of the end of another year at Brown, and in celebration of the summer to come. A warm thanks to our friend Nathan who graciously allowed me to intrude upon his enjoyment of this humble yet intensely addictive frozen treat, courtesy of the beloved V-dub soft serve machines. 'til next semester, adieu!

Carrot Cake with Cinnamon Apples

Because two layers are better than one, and because cinnamon apples and whipped cream are better than no cinnamon apples and whipped cream.

Cheesy Pasta "Bake" with Mushrooms

Despite not having been able to brown the cheese in an oven, we were able to achieve cheesy goodness with a 2 minute spin in the microwave by the V-dub's waffle station. Yes, finals are over and for those of us who've gone home for the summer, the microwave method is not strictly necessary but can still work wonders when you are in a hurry (or just overcome with that sweeping epidemic of summertime laziness).
Cheesy Pasta "Bake" with Mushrooms
pasta (fusilli is our favorite but penne is awesome too)
meatless sauce
shredded cheese blend
parmesan cheese
mushrooms
stewed tomatoes (optional but a plus if they are being served!)
1. Get pasta and sauce in a bowl.
2. Put mushrooms and stewed tomatoes on top of pasta.
3. Sprinkle shredded cheese, then parmesan, over the top of everything and microwave for 2 minutes or until cheese is hot and melted and blended with sauce.
4. Sprinkle on some salt and pepper, if desired, and enjoy!

Berry Vanilla Parfait

Those plastic cups at the V-dub are just gigantic! If you make this, do plan to share it with some friends who don't mind eating ice cream in this icy weather. Sliced bananas are a great addition too. We recommend slightly under-ripe bananas because they lend a cooling contrast to the sweetness of the ice cream and berry compotes.
Berry Vanilla Parfait

blueberry compote
a mix of Golden Grahams and Cinnamon Toast Crunch, crushed
a sugar cone
whipped cream
1. Layer the fruit compotes, ice cream, and crushed cereal in a tall clear glass.

Savory Waffle Sandwiches

While these were good, during the time it takes to split the waffle open and make the sandwich, the waffle crust goes from satisfyingly crispy to disappointingly soggy. Still, the flavors were pretty good, and it's worth a try if you are a waffle fan. The good news is we have a secret genius idea for maintaining the crispy crust of a waffle sandwich...stay tuned!
Savory Waffle Sandwiches
1/2 spoonful of waffle batter
1 lettuce
1/4 cup tuna salad
1 slice swiss cheese
1/4 cup garbanzo bean salad (pre-made at the V-dub...plain garbanzo beans with some dressing and roasted red peppers work too)
1. Pour waffle batter into half of the waffle iron.
2. Make waffle.
3. Cut in half, and split each half into two without burning off fingers.
4. Fill with fillings.

Salmon and Sundried Tomato Salad

Gotta love the V-dub and their salmon stir fry! This salad looks like something from Andreas, but it's really embarrassingly easy.

romaine lettuce leaves
feta cheese
red onions
extra virgin olive oil
1. Top a bed of greens with salmon, cheese, red onions, and a drizzle of extra virgin olive oil.

Crispy Waffle with Whipped Cream
This was made somewhat on accident. The waffle batter happened to be runny, and it had the effect of producing a layered, nook-and-cranny filled, funnel-cake-like, crispy golden waffle that was just delicious with fluffy whipped cream.
Crispy Waffle with Whipped Cream
half ladle of waffle batter (make sure it is runny)
2-3 second squirt of whipped cream
1. Generously spray non-stick spray on top and bottom of waffle iron.
2. Pour runny waffle batter into waffle iron, press top down and turn over immediately and cook for 2 min 15 seconds.
3. Serve with a generous squirt of whipped cream and enjoy by a sunny window.

Spicy Tuna Melt Baked Potato

sprinkling of dried chives
salt and black pepper
broccoli on the side

DO NOT Make this Peanut Butter Waffle!

This was originally posted a long time ago, before we were notified that no one should put peanut butter in the waffle irons because of allergies! We are sincerely sorry for setting a bad example, but instead of deleting this post, we feel that it would be helpful to keep it here as a friendly reminder for future peanut butter waffle lovers.
Original Post:
The peanut butter mixed directly into the waffle batter makes an extra crunchy crust and infuses the whole waffle with a rich peanut butter flavor.

3. Cook waffle as directed.
4. In a small cup, mix honey and 1 Tbsp peanut butter. (Note: Feel free to use just honey instead of the mixture, if you prefer)
5. Garnish waffle with sliced bananas, peanut butter and honey mixture, and whipped cream.
6. Dust the top with cinnamon.
